우리나라 광복이후 조성된 염전 중 조성 당시 최대 규모로 천일염을 만들던 곳은 어디일까요?
*천일염(天日鹽) 바닷물을 햇볕과 바람에 증발시켜 만든 소금. 해수를 염전의 저수지, 증발지, 결정지로 차례 차례 옮겨서 태양열, 풍력 따위로 수분을 증발/결정시켜 만든다.

바로 전라남도 신안군에 위치한 비금도입니다. 1940년대 비금도에 '대동염전'이 생기면서 천일염의 역사를 새롭게 쓰게 되었습니다.

비금도의 터전인 전라남도에는 지금까지도 그 시절 모습을 간직한 염전이 많습니다. 이는 선대부터 최고급 천일염을 만들어 온 전남지역의 장인정신에 전라남도의 지리적 이점이 더해져 만들어낸 결과로, 맑은 공기, 긴 일조량, 청정 갯벌 등 전라남도 서남해안의 갯벌은 천일염을 생산하기에 제격이라고 합니다.

특히 이곳에서 갯벌을 오가는 바닷물을 증발시켜 만든 천일염은 미네랄, 칼슘, 마그네슘 등의 성분이 많이 포함되어 음식의 맛을 살려줄 뿐만 아니라 고혈압이나 당뇨를 완화시켜 주는 것으로 밝혀지는 건강심품으로 각광을 받고 있습니다. 일반적인 소금과는 근본이 다르다는 것이지요. 그래서 그런지 이런 명품소금에 영향을 받은 남도미향의 57여개의 브랜드들의 프리미엄 먹거리들은 간이 참 자연스럽게 조절되는 것 같습니다. (물론 남도미향에서는 천일염이 쓰인 먹거리 외에도 프리미엄 천일염을 국내 최저가로 판매하고 있긴 합니다.)


화학적으로 만들어지는 소금과는 근본이 다른 전라남도 천일염에서 만들어지는 소금은 비만이나 고혈압, 동맥경화, 심장병 등을 유발하는 염화나트륨(NaCl : 요즘 아이들은 화학시간에 참 많이 배운 용어이지요)의 함유량이 적습니다. 일부 수입산 소금이 95%의 염화나트륨 함유량을 보이는 반면 전라남도 천일염은 약 85% 정도밖에 되지 않아 짜지 않으면서도 감칠맛이 나기 때문에 더욱 주부님들의 사랑을 듬뿍듬뿍 받고 있답니다. ^^

이러한 이유 덕분인지 국내산 천일염을 이용하면 음식의 맛이 확~달라진다고 합니다. (주부 블로거 분들에게 직접 테스트 해달라고 하고 싶은데 말이지요;;) 이 얘기도 전라남도청 쪽에서 들은 이야기라 일단 신뢰성 있는 내용이기는 한데 전라남도의 주부님들이 김치를 담글 때 천일염을 썼는지 일반 소금을 썼는지에 따라 식탁앞 가족들의 표정이 확 달라진다고 합니다. (실제 사례입니다.)

특히 우리나라의 전통발효식품을 만들 때 천일염이 많은 영향을 미치는데, 이를 연구한 목포대학교 측에 따르면 천일염을 이용한 젓갈이 미네랄 함량이 적은 소금으로 담근 젓갈에 비해 성분이나 품질면에서 월등히 우수했다고 합니다.

또한, 수입소금 대부분이 산성인데 반해 우리나라의 천일염은 알칼리성을 띠고 있어 건강에도 많은 도움을 줍니다. 우리 몸은 적정 산성도를 유지해야 하는데 자주 섭취하는 가공시품 중 상당수가 산성을 (과다하게!!)띄고 있으므로 알칼리성을 띠는 자연산 천일염을 일상생활의 음식에서 섭취는 것이 몸의 평형을 유지하는데 이로운 것이지요.

하지만 우리나라 천일염, 그중에서도 예전부터 임금님께서 자주 찾으신 전라남도의 천일염을 마음 먹은대로 골라먹기가 쉽지 않다고 합니다. 외국산 수입염과 국내산 천일염을 육안으로 구분해 내기란 쉽지 않을 일이기 때문입니다. 따라서 천일염을 구입할 때 원산지 표시를 세밀히 살펴보고 상황에 따라서는 산지 직거래와 같은 방법을 동원하면 제대로 된 천일염을 고를 수 있으니 이점 유의하시기 바랍니다.
