요리레시피로 유명하신 파워블로거 잠꾸러기님이 굴비고추장으로 이용한
군침도는 두부비빔밥 레시피를 가져와봤어요^^
백일송이버섯무침,어묵김치볶음,섬초나물로 이용하여
보기만해도 자연향이 진하게 남는 두부비빔밥 레시피 다같이 알아볼께요 ~

울집 건강식 메뉴 두부비빔밥입니다.
언젠가 서울 한식당에서 먹어보고 바로 만들어서 줄곧 울집 단골 메뉴에요~
고기없이도 두부만으로 단백질 섭취도 좋고, 채소류 듬뿍 먹을수 있는 건강식 메뉴랍니다.
거기에 여러가지 굴비살만 발라 갈아넣은 고추장에 비볐더니 정말 굿이었어요~

두부의 고소함이 가득한 건강식 비빔밥입니다.

두부랑 집에 있는 나물들로 만든 간단 비빔밥이에요~
두부와 나물들 자세한 레시피 들어갑니다.

두부는 넙적하게 잘라 소금 약간 뿌려둔뒤 기름 두르고 노릇하게 지져냅니다.

김치와 어묵은 채썰어 참기름+포도씨유=1큰술 두르고,
김치부터 볶다가 충분히 볶아지면 어묵 넣고 물2큰술 넣어 볶아줍니다.

따로 간맞추지 않아도 김치와 어묵 간만으로 충분합니다.

김치가 마니 짤경우엔 매실액기스 약간 넣어서 중화시켜주세요~

김치어묵볶음 준비끝났구요~

백일송이 버섯 가닥가닥 뜯어서 소금 약간 넣고 데쳐줍니다.

찬물에 재빨리 헹궈 어간장, 들깨가루, 참기름, 다진마늘, 다진파에 조물조물 무쳐줍니다.

들깨가루는 껍질이 벗겨진 가루를 사용하시구요, 없으면 생략하셔도 됩니다.

백일송이 요렇게 무쳤어요~ 그냥 밥반찬으로도 굿이에요~

섬초도 데쳐 어간장, 참기름, 다진파, 깨 넣고 조물조물 무치면 됩니다.

선초는 달큰한게 겨울채소중 으뜸이네요~

그릇에 듬뿍 담아주고 볶음고추장이나 고추장 얹어주면 됩니다.

전 남도미향에서 체험단으로 받은 굴비고추장을 올려서 담아냈어요. 푸짐해보이죠?ㅎㅎ

작년에 시엄니가 사용하시던 오래된 그릇... 사용안하고 계시길래 달래서 작년에 가져온거랍니다.

요기에 담아보니 오래된 앤틱이라 정겹죠?ㅎㅎ

꼭 이 채소들을 사용하는건 아니구요,

집에있는 애호박, 당근, 양파, 가지...나물들 이용하시면 돼요~

굴비고추장은 굴비의 달큰한맛과 양파가 들어가서 짜지않고 고소한 맛을 내줍니다.

예로부터 지금까지 제사상에 빠지지 않고 꼭 올라오는 음식이 바로 굴비에요

굴비가 제사상에 올리는 필수 음식인 이유는 그만큼 맛도 좋고 귀하기 때문이겠죠

수많은 굴비 중 영광굴비는 예로부터 뛰어난 맛과 풍부한 영양성분을 자랑하는 고급생선으로 자리매김 하고 있어요.

남도요리사 미진이예요^^* 오늘이 바로 2010년이 시작된지 7일째! 일주일 되는 날이랍니다. 저는 요즘 일주일이 7일이란게 너무 아쉽답니다. 여러분은 어떠세요? 헤헤. 저는 요즘엔 일주일이 한 열흘이었으면 좋겟답니다.

오늘은 여러분과 굴비에 대해서 이야기를 나눠볼까 합니다. 여러분 모두 굴비 좋아하시죠? 전 굴비가 너무 좋아요.......................^^ 굴비는 조기를 소금에 절여 말린 것으로, 참조기로 만든 영광굴비가 유명하죠.
한국연안에서 잡히는 조기류는 13여 종 정도가 있습니다. 그 중 가장 유명한 것이 참조기랍니다. 황석어라고도 불리는 참조기는 몸빛이 회색을 띤 황금색이며, 입이 불그스레하고 몸통 가운데 있는 옆줄이 다른 조기에 견주어 굵고 선명하답니다.특히 산란을 위해 3월 중순 영광 법성포 칠산 앞바다를 지나는 참조기를 쓴 굴비를 영광굴비라고 한답니다.

안녕하세요. 남도요리사 미진이입니다. 저는 요즘 시간이 참 빠르다는 생각을 자주 하게 되요. 나이가 한살 더 먹었다는 사실도 그렇지만 벌써 2010년이 시작된지 6일이나 지났거든요. 여러분도 그렇게 느껴지시지 않나요? 헤헤. 2010년에는 각자 계획하고 소원하는 일들이 모두 이루어지는 한 해가 되길 바랍니다. 모두 2010년 계획은 세우셨죠? 남도요리사 미진이의 소원이자 계획은 뭐니뭐니해도 여러분께 맛있는 음식을 선보이는 것 이랍니다. 그래서 저는 항상 ' 2010년 어떤 맛있는 음식을 선보여야 할까 ' 고민하고, 또 고민하고 있답니다.

남도미향입이다 ^^ 오늘은 굴비~하면 제일 먼저 생각나는 영광굴비에 대해 설명 드릴께요

"밥도둑" 이란 별명이 붙은 영광굴비가 유명해진 이유는 타지방의 것에 비해 유별 나게 맛이 좋기 때문이예요.

영광굴비가 이처럼 독특한 진미를 내는 비결은 무엇일까?

첫째. 법성포 앞바다인 칠산바다에서 잡히는 참조기는 알이 비대할 뿐만 아니라 지방이 풍부하고 둘째. 법성포의 특수한 자연환경, 지리적 기상요인과 서해에서 불어오는 계절풍의 영행으로 건조조건이 월등하고 셋째.옛부터 전래되어온 1년 이상 간수가 빠진 천일염으로 염장하는 제조기법이 특이하다는 점이며 넷째. 전혀 오염되지 않은 물로써 세척하기 대단히 위생적이다.

여기에 한가지를 덧붙인다면 법성포민들이 영광굴비의 전통을 지키려는 자존심으로 제품의 질을 높이기 위해 지속적인 노력을 기울이고 있다는 점입니다.^-^

요즘 인기 있는 전라남도 영광의 보리굴비에 대해 소개할께요.

고소하고 영양이 풍부한 영광 보리굴비

보리굴비는 참조기 만으로 만들 뿐 아니라, 냉동과 해동이 반복되는 다른 굴비와 달리 단 하루 동안 가공한 뒤 염장해 육질이 매우 단단하고 어떤 방법으로 조리해도 쫄깃쫄깃한 맛을 즐길수 있습니다. 보리굴비는 방망이로 두들겨서 뜯어놓으면 그대로 밥반찬이 되는데요. 껍질과 뼈만 발라내고 아무 양념없이 짭쪼름하고 고소한 씹히는 그맛은 맛 중의 백미라고 할 수 있답니다ㅎㅎ 보기만해도 군침이...

영광의 '마른 굴비'에 대해서도 소개해드릴께요 ^^

맛과 향이 강하지만 짜지 않은 마른 굴비

마른 굴비라는 메뉴를 보고 '굴비가 조기 말린 것 아니냐'고 묻는 사람들도 있지만 마른 굴비란 염장한 일반 굴비를 바람에 말리거나 보리에 묻어둬 더 바~짝 말린 굴비를 뜻합니다. 보통 3~4개월을 말리는데, 일반 굴비보다 더 단단하며 맛과 향이 강하게 농축! 하.지.만 짜지는 않은 특징이 있어요.

바싹 말렸기 때문에 크기가 작은 것이 보통이며 살에서 갈색이 돌며, 굴비보다 2-3배 비싸답니다.

보리굴비는 손으로 쭉쭉 찢어먹어야 제맛. 이렇게 단단한 마른 굴비는 뜨끈한 쌀밥에 한점 올려놓고 꼭꼭 씹어 먹어야 맛과 향을 제대로 느낄수 있습니다. 아유 먹고싶네~정말 밥도둑이네요.ㅋ

전라남도가 친환경농업을 집중 육성하기 위해 생명식품생산 5개년계획을 지속적으로 추진해온 결과 정부 친환경농업대상 평가를 휩쓸었어요.^-^

30일 전남도에 따르면 농림수산식품부 주최 제6회 친환경농업대상 평가에서 전국 기초지방자치단체부문에 순천시가 최고 영예의 대상을 차지했고 친환경농업우수지구부문에 총 6개 부문중 초기유통부문을 제외한 모든 부문에서 수상을 휩쓸었습니다.

몸에 좋은 식품 친환경농업 육성에 최선을 다하고 있는 전라남도

신광수차는 지난 2001년 전국 최초로 유기인증차를 생산해 유럽에 수출하는 등 국제적인 명성을 획득한 공로를 인정받았고 도지사 박준영님께서 전라남도 프리미엄 브랜드 남도미향 식품을 전국민에게 보급하는데 적극적인 지원을 해 주신점도 높은 평가를 받았습니다.

시상식은 오는 12월 10일 농식품부 주최하에 농수산물유통공사(at센터)에서 개최되는 제6회 친환경농업대상 시상식장에서 개최됩니다.

윤성호 전남도 친환경농업과장은 “이처럼 전남이 정부 평가를 휩쓴 것은 지난 2005년부터 도정 역점시책으로 친환경농업 육성시책을 펼쳐온데다 친환경농업을 통해 안정적인 판로확보와 소득창출을 위해 농업인들이 적극 동참해온 결과”라며
“앞으로도 우수한 사례를 계속 확대 보급해나가면서 내년부터 시작되는 유기농 생태전남 실현을 위한 ‘생명식품산업’ 육성 제2차 5개년 계획을 통해 무농약, 유기농 중심으로 더욱 내실있게 추진해 나가겠다”고 밝히셨습니다.

밥 한그릇 뚝딱! 밥도둑 고추장참치, 고추장굴비
(고추장참치, 고추장, 반찬, 밑반찬) by 남도미향

집에 있는데 입맛은 없고 반찬은 하기 싫고~ㅠ

입맛을 돋구고 간단하게 끼니를 해결할 방법이 없을까?

이번에는 아이들이 좋아하는 밥도둑 고추장참치 만들기를 알려드릴게요^-^

만드는 방법은 그리 복잡하지 않으니 잘 따라오실 수 있으실 거예요.

지금 바로 시작할게요! 히위고ㅋ

준비 재료는 다음과 같아요^^

참치통조림 1통(큰거), 양파 1/2개, 감자 1/2개, 당근 1/3개, 청양고추, 파, 고추장 2큰술반, 간장 2/3 작은술, 물 1/3컵, 깨소금, 소금, 밥 1공기

1. 감자, 양파, 당근을 먹기 좋게 썰어 놓아요!

2. 후라이팬을 달궈주세요.

3. 달군 후라이팬에 참치 통조림 기름 반정도를 두릅니다.

4. 썰은 감자, 양파, 당근을 통조림 기름에 볶아주세요.

5. 어느 정도 야채들이 익으면 참치를 넣고 볶아주세요.

6. 3분정도 볶다가 참치 통조림 기름, 고추장과 약간의 물을 넣습니다.

7. 깨소금과 소금, 기호로 청양고추로 마무리 해요~!

8. 마지막으로 따뜻한 밥 위에 고추장참치를 올려 놓습니다

짜잔~ 드디어 완성했어요!!
