먼저 면과 짜장 가루를 준비합니다. 면과 짜장 둘다 시중에 팔고있는 걸 준비해 주시면되요. 옛날엔 짜장이 가루로 나오지 않아서 춘장을 기름에 볶아야 하는 번거로움이 있었지만 요즘엔 가루로 나와 서 카레하듯이 손쉽게 할수 있게 됬죠?
야채는 깍둑썰기 해서 준비합니다. 해물은 마트에 사는 냉동 모듬해물이었기 때문에 물에 잠깐 담갔다 건져서 준비합니다.
먼저 기름을 두른 후라이팬에 감자와 당근을 뺀 나머지 야채와 해물을 넣고 가볍게 튀기듯이 볶아 따로 그릇에 다시 담아 준비합니다.
원래는 당근, 감자와 같이 볶아 그후에 짜장 육수를 넣어 끓이면 되는데, 음식점에서는 불이 쎄서 그렇게 해도 야채가 살아 있어 야채의 맛을 살릴수 있지만 보통 가정집은 불이 음식점같이 쎄지 않아서 같이 하게되면 감자, 당근은 안익고 다른 야채들은 물러버려 맛이 없어지죠.
이제 다시 후라이팬에 기름을 두루고 당근과 감자를 볶습니다. 어느정도 볶아지면 짜장육수를 부어주세요.
짜장육수란? 위에 있는것처럼 짜장가루를 미리 찬물에 풀어 놓을것을 말합니다. 당근, 감자를 볶은 후라팬에 물을 붓고 가루를 풀게되면, 물이 따뜻해져서 가루가 잘 안풀리게 되더라구요. 가루는 찬물에 잘 풀리기 때문에 미리 찬물에 풀어 놓으시는게 좋습니다.
육수를 부으신후 밑이 눌러 붙지 않게 저어가다가 미리 볶아 놓았던 야채와 해물들을 넣고 다시한번 볶아주세요. 너무 야채가 무르지 않을 정도로 볶아주시고 어느정도 국물이 걸죽해지면 설탕으로 단맛을 조절해주시면됩니다.
시중에 판매되는 짜장가루는 조금 짜더라구요. 보통 중국집 짜장은 조금 단맛이있죠? 단맛을 원하시면 설탕을 조금 넣으시면되고 간을 보신후 입에 맞으시면 안넣으셔도되요.
이제 면을 준비하시면되는데 면은 끓는 물에 면을 넣어서 풀어지게되면 바로 건져주시면됩니다.
면은 물을 빼서 그릇에 담아주시고 그위에 짜장을 얹어서 맛있게 먹으면 되겠죠...^^*
중국집 흉내를 좀 내봤어요. 오이를 얹으니 색이 좀 사나요??? 면이 좀 굵어서 전통 짜장의 맛과는 좀 다르지만 그래도 꽤 맛난 짜장을 즐길수있어요.
